I made an amazing discovery over the last weekend.  I had bought some green leaf lettuce and put it in the fridge.  I had bought some of the bagged salad fixings, so I hadn’t opened the green leaf.  Well, when I went to open the bag of
lettuce, I found that the leaves had wilted.  I was looking forward to a great salad with with crisp green leaf lettuce, but that was not going to happen.  So I decided that I did not want to waste the lettuce, so I did some research on de-wilting lettuce.  I found that most of the time when lettuce is wilted, it is dehydrated.  If you re-hydrate it, it will be crisp and crunchy.  How do you do this you ask?  Well I’ll tell you…..  Fill a large bowl with very, very cold water, and put ice cubes in the bowl too.   Then immerse the wilted lettuce in the bowl of cold water and ice one leaf at a time.  Make sure the water completely covers the lettuce leaves.  Let it set for about 20-25 minutes.  If in fact the lettuce was dehydrated, it will then be crisp and firm and a great addition to a healthy salad.
